Summary of the itinerary: The march consists of two sections. On the one hand, we will walk with donkeys through the center of the Berastegi meadows. On the other hand, we will visit the “Gazpio” sheep farm and the cheese factory, ending with a cheese tasting. In addition to understanding the landscape and getting closer to the world of shepherds, we will learn about the current reality of a shepherd.
We will meet in the Berastegi square and, after crossing the town, we will visit the center of the green meadows of the town. We will make three stops along the way to give brief explanations. And from there we go to the “Gazpio” cheese factory. Then we will return to the town square and finish the visit.
Along the way, the following contents will be worked on:
– Berastegi herding: a combination of history and current practices.
– Within the meadows, the landscape and its surroundings will be interpreted. How is it so green?
– We will offer explanations and reflections on the latxa sheep and the shepherd.
– Pastor Gazpio’s history and current affairs, work he carries out throughout the year.
– Comparison of cheese making in its day and today.
– Tasting of a cheese with attention to its skin, color, smell, texture and flavor.
Tasting: Three types of “Gazpio” shepherd’s cheese will be tasted: natural, smoked and cottage cheese. There will be four triangles per person per class and a bit of cottage cheese (with the help of some picks) and cider, water and wine will be offered with the traditional “bota” (how to do it will be taught).
